Fig and Walnut Cookies





There are so many amazing foreign food shops in my neighborhood, so it is always easy to get hold of slightly rarer ingredients. I found my new favourite shop today, selling big kg bags of dates and any nuts you can think of. I was in heaven! There was almost too much choice and I just couldn’t decide what to make today, but I think I made the right decision.

These didn’t turn out quite how I expected…. they don’t look exactly how I wanted them to, but luckily they taste delicious. There are so sweet and so creamy, walnuts are a nice change and the figs out here are incredible! So much better than any we get at home. 


I haven’t posted anything  recently because I have been so busy, and so the best thing about these is that they are super quick and easy to make. They are raw so all you need is a blender, you can whip them up in minutes. My flat mate thinks they taste like cookie dough, except they are so much healthier.





Walnuts are packed full of omega-3 fatty acid and vitamin e, which is really important for your immune system. And figs contain a very high level of calcium for a fruit, plus they are sweet, squishy and delish.  Both the dates and figs are a great source of fibre, making these cookies a completely guilt-free treat.






2 cups of dates

3 cups of walnuts

3 figs







Blend 2 cups of pitted dates with 2 cups of walnuts and 2 figs until you have a smooth mixture. Roughly chop the leftover walnuts, stir them into the mixture, then roll it into balls the size of golf balls. Squash them flat a bit then decorate with fig slices and put in the fridge to firm up.
